Buffalo Chicken Casserole

Loaded Baked Potato & Chicken Casserole 


2lbs chicken breast
8 medium potatoes or 6 large
1/3 cup Olive Oil
1/2 tsp salt
1 TBS Paprika
2 TBS Garlic Powder
6 TBS Hot Sauce
2 cups Shredded Cheese
1 cup crumbled Bacon

Preheat oven to 450F
In a large bowl mix Oil, Salt, Pepper, Paprika, Garlic Powder & Hot Sauce
Cube the potatoes & add to the bowl
Coat a 9x13 dish with cooking spray
Add potatoes, but scoop them out of the bowl so excess sauce stays in the bowl, do not pour the sauce and potatoes into baking dish
Bake the potatoes for 45 minutes, stir every 15 minutes
Cube the chicken & add it to the bowl with the left over sauce
Once potatoes are done, add the uncooked marinated chicken and bake for 10 minutes.
Then layer the toppings over the chicken and bake for 5 minutes more

Cut down for 2, still leaves some leftovers
3 large potatoes
1 28 oz can of Swanson's chicken
1/3 cup olive or canola oil
1/4 tsp salt
1/2 TBS Paprika
1 TBS Garlic Powder
3 TBS Hot Sauce or 4 TBS of Wing Sauce
1 cup Shredded Cheese
4 strips worth of crumbled Bacon
Use a 9x9 dish
